My initial dream was to write a cookbook that focused strictly on getting in better shape and losing belly fat. And while I’ll never dispute the importance of that, I realized that nutritionally, there was an even higher calling for me to undertake.

It started the day a mother of two called me, at the end of her rope. Her six-year-old was the prototypical picky eater who seemed to despise everything put on her plate. And her 8-year-old son lived with a rare kidney disorder, which required a specific regimen of clean and healthy food. I invited the family over for an afternoon of cooking: Cornish Game Hen with Gluten-Free Stuffing, Butternut Squash with Roasted Organic Corn Soup, Gluten-Free Chocolate Cupcakes were all devoured without the slightest protest, and I had one happy mother and two satisfied children leaving the table asking for the recipes.
Since that day, I’ve encountered dozens of parents with children who are either picky eaters or are afflicted with disorders such as Autism or ADD. Giving a child living with these conditions foods laced with chemicals and additives only makes the problems worse. And even if you’re lucky enough to have children with no health challenges, processed and fast foods are no way to build a foundation of health for a child. A big part of what I want to get across in my cookbook is that as adults, we have the power to develop and guide our children’s palates at a young age. Present them with delicious food that’s good for them and you’ve not only set a positive direction for the rest of their lives, you’ve given a child the priceless gift of better health. That’s what “My Picky Eaters” is all about: getting kids and adults to realize that clean, healthy food can taste amazing!
And here’s the coolest part: “My Picky Eaters” isn’t just for kids. Just about anyone can and will benefit from a lifestyle that includes gluten-free and dairy-free dining. Throughout the book, you’ll read personal accounts of regular, everyday people who have transformed their lives and their bodies simply by coupling physical activity with
the elimination of a few unhealthy ingredients that have unfortunately become an elemental part of the American food chain. They achieved weight-loss and well being without surgery, dieting, or drugs….and while thoroughly enjoying food in the process. I look forward to sharing My Picky Eaters with the world.
