This is one of my favorite quick and simple recipes and its yummy and full of protein.
Gluten Free Sante Fe Chicken Wrap
Ingredients:
1/2 boneless chicken breast
1tbsp olive oil
1/2 slice of gluten free tortilla wrap or spinach wrap ( La Tortilla Factory is a great brand its wheat free made with whole grain teff & millet flour)
3 tbsp of your favorite hummus
2 organic romaine lettuce leaves
2 large tomatoes
Directions:
1. Pan fry chicken throughly in olive oil
2. Cut chicken into thin slices
3. Spread hummus on wrap( u can slightly heat wrap on both sides optional)
4. Place lettuce, tomato slices and sliced chicken on top of hummus.
5. Roll wrap and enjoy!
